How is Starch Different from Cellulose?

Glad you asked...
Cellulose is more stable than starch. Cellulose can't be digested by our bodies at all and it will just pass through the body through the digestive tract whereas starch is absorbed.

Then again, this answer might help you...
Starch and cellulose are the same in that they are both polysaccharides, but where they differ is their molecular structure. The structure of cellulose makes it non-digestible by humans, whereas starch is digestible. You can find more information here: http://pslc.ws/macrog/starlose.htm...
